Pesto Chicken burgers

Ingredients

1 lb organic uncooked ground chicken thigh or ground turkey

4 tbsp basil pesto

1/4 cup finely shredded parmesan cheese

4 cloves garlic, minced

pinch of kosher salt

Ground black pepper

2 Tbspn Olive oil (or if grilling, non stick grill spray)

1 cup basil leaves

4 slices organic tomato

Sliced Mozzarella cheese (optional)

2 Ezekiel 4.9 flax English muffins or other bread such as Ciabatta rolls

Directions

In large bowl combine the chicken or turkey, 2 Tbsp of the Pesto (note this is 1/2 the amount noted above), Parmesan cheese, garlic, salt and pepper.  Gently combine and then shape into 4 patties.

Heat grill or use grill pan on stove top (coated with olive oil).  Grill or cook about 6 minutes each side.

While grilling, slice tomato and toast rolls or english muffin halves.  

Arrange basil leaves on toast/muffin.  Top with a pesto burger, then mozz cheese and tomato.  Lastly drizzle remaining pesto over each burger.


Notes

Patties can be prepared up to an hour ahead of time and kept in refrigerator
