Kimchi turkey burgers

You'll find korean chile paste (Gochujang) in the international food aisle at the grocery store.

4 servings

Ingredients

1 pound organic ground turkey thigh

1 bunch scallions sliced thin (white part only)

8 teaspoons Korean chile paste (divided - watch details below)

1 tspn dark sesame oil

2 tablespoons avocado mayonnaise (like Primal Kitchen brand)

2 Ezekiel flax frozen english muffins (thawed)

sliced cucumber

1 cup Kimchi

Directions

Heat grill to medium high or heat a grill pan on stove (coated in non stick spray)

Combine turkey, scallions and 5 tspns chile paste with sesame oil in a large bowl.  Form into 4 patties.

Grill burgers for about 7 minutes each side or until 165 degrees internal temperature

While burgers cook, combine mayo and remaining 3 tspns chile paste in small bowl.

Assemble burgers by toasting the english muffin halves and topping with burger, then mayo/chile paste mixture and kimchi.  Top with cucumber slices.
