Blueberry oat muffins

Note:  Oats must be soaked 8 hours or overnight.  Addition of Your Super Forever Beautiful is optional.

1 dozen

Ingredients

2.5 cups old-fashioned rolled oats

1.5 cups low-fat organic milk

1 large egg

1/3 cup pure maple syrup

2 tablespoons coconut oil (melted)

1.5 tablespoons Your Super "Forever Beautiful"  (contains chia seeds, Acai, Maca and more!)

1 tsp vanilla extract

1.5  tsp ground cinnamon

1 tsp baking powder

1/4 tsp salt

1 cup organic blueberries (fresh or frozen)

Directions

Soak oats in milk for 8 to 12 hours in a large bowl in the refrigerator.  Preheat oven to 375 degrees F.  Coat a 12 cup muffin tin with non stick spray.  In separate bowl, beat egg, then add all ingredients except blueberries.  Combine egg mixture into oats and mix well.  Spoon into muffin tins 3/4 full.  Top each with blueberries.  Bake for 20 to 25 minutes until muffins spring back when touched.  Best served warm but these can be stored in the refrigerator for 3 days or frozen.  Reheat and top with Yogurt for a more filling breakfast /lunch !
